Curatorial context

The 'Pieprzno i szafranno' (Peppery and Saffron) culinary workshop offers participants a journey into the rich history of Polish cuisine, spanning the 16th to 18th centuries. The first session on April 12th focuses on the 16th century, characterized by oriental spices, sour notes, and bold contrasts influenced by Eastern contacts. The menu includes baked root vegetables in an apple cider vinegar and honey marinade with cumin and ginger, bread dumplings in a saffron sauce with raisins and pepper, and cardamom rice pudding with saffron and rosewater. The second session on April 26th explores the 18th century, a period of gentler, more 'European' flavors with French inspirations. Participants will prepare Por a la Polonaise, pierogi with smoked cheese and potatoes, and baked apples with vanilla sauce. These workshops are led by Piotr Bruś-Klepacki, an experienced chef passionate about ethnic cuisines and culinary history.

Admission and ticket notes

Tickets for the culinary workshop were priced at 40 PLN per session and have all been sold out. The workshop is open to individuals aged 14 and above.
